Peri Peri Chicken Tikka

Get ready to excite your taste buds with our delicious Peri Peri Tikka Masala recipe! We are combining the bold kick of peri-peri with the delicious goodness of tikka masala by using the incredible Ma Spices Peri Peri Tikka Masala. It’s a journey your taste buds won’t forget!

Ingredients:

  • 6 cloves garlic

  • 4 red Fresno chili peppers, seeded

  • 1 habanero pepper, seeded

  • 1/2 cup diced red bell pepper or other sweet pepper

  • 1 tablespoon smoked paprika

  • 1 tablespoon fresh thyme leaves

  • 1 1/2 teaspoons kosher salt

  • 1 teaspoon freshly ground black pepper

  • 1 teaspoon ground cayenne pepper

  • 1 teaspoon white sugar

  • 1/2 teaspoon onion powder

  • 1/2 cup mild olive oil, or vegetable oil

  • 1/3 cup sherry vinegar

  • 2 lemons, juiced

  • 4 chicken leg/thigh quarters

  • kosher salt to taste to season chicken

Step 1: 
Combine garlic, sugar, onion powder, kosher salt, black pepper, cayenne pepper, habanero pepper, bell pepper, smoked paprika, and thyme in a blender. Add the lemon juice, sherry vinegar, Maspices Peri-peri Chicken tikka masala, and olive oil. A process on high until the marinade is fully smooth.
 
Step 2:
Fill resealable plastic bag in bowl with three-quarters of the marinade. Keep the remainder for serving together. Cut three or four shallow incisions into the chicken quarters’ skin side. In the process of marinating, this will enable the sauce to seep into the skin. Put the chicken in the bag after seasoning it with kosher salt on both sides. Once the chicken is thoroughly and uniformly coated in the marinade, seal the lid and toss and massage the chicken.
 

Step 3: Set an outside charcoal grill on medium heat and give the grates a quick oiling.

Step 4: Take the chicken out of the marinade. Using indirect heat, place the skin side down into the heated grill. To prevent the coals from becoming too hot, cover. After cooking them covered for about five minutes, flip them over and continue grilling for ten to twelve more minutes. Depending on the size of the chicken pieces and the temperature of the grill, continue flipping them and spraying them with the saved marinade as needed until they are cooked through. This could take up to an hour.

Step 5: Present with the sauce that was set aside.

METHOD: 1) Marinate 500 gms of boneless chicken Leg Pieces in Ginger-Garlic paste, chili paste, 2 tbsp Oil and Lemon Juice, MA’Spices Peri Peri Chicken Tikka Masala and keep it aside for 2-3 hours. 2) Barbeque it on skewers OR shallow fry or put it In the oven and serve with Onion and Chutney.
