Step-by-Step Instructions

Step 1: Mixing the Nihari Masala

To begin, make a fine powder using a grinder. Once the fine powder is ready, add the powdered spices, including the optional Kashmiri Chilli Powder. Mix all the spices well including Ma spices Nihari Masala . This masala is sufficient for 1.5 kg of meat.

Step 2: Cooking the Trotters

Start by cooking the beef trotters. Close the lid and cook the trotters until they become tender. Keep in mind that beef trotters take time to cook properly.

Step 3: Cooking the Shank Meat

In a pressure cooker, add 1 cup of oil and heat it. Once the oil is heated, add the shank meat and ginger garlic paste. Then, add the Nihari powder that you prepared earlier. Fry all the ingredients for 5-6 minutes to remove the rawness of the meat and ginger garlic paste.

Step 4: Adding Onion Paste and Water

After frying, add the onion paste to the mixture. It is recommended to use onion paste as it enhances the flavor and increases the quantity of the curry. Transfer the trotters and shank meat to a big vessel, and turn on the flame. Cook the mixture and add the lacquer you ejected from the big bones. You can also add the big bones, but it may look awkward, so it is better to remove them. Cook the mixture on high flame and remove any surface oil in a separate bowl. This oil will be used later.

Step 6: Thickening the Nihari

After a few minutes, you will observe the mixture boiling. In a separate bowl, mix 2 tbsp of all-purpose flour with 1/2 cup of water. Pour this mixture into the Nihari while stirring it with your other hand. This will increase the thickness of the Nihari. Cook the mixture for another 20-25 minutes on low flame. To avoid burning the all-purpose flour, you can put a heavy-bottomed pan below the vessel.

Step 7: Tadka for Nihari

Once the Nihari is cooked perfectly, it's time to prepare the tadka. Take a tadka pan and add 1/4 cup of oil. Heat the oil and add a chopped onion of medium size. Fry the onion until it turns golden brown. Then, add the coriander leaves, green chillies, and julian cut ginger. These three ingredients are a must for a perfectly flavored Nihari.

Step 8: Garnish and Serve
