This recipe will leave you craving for more, and you won't be able to resist making it again and again.

Ingredients

To make this mouthwatering dish, you will need the following ingredients:

  • Grinder to make a fine powder
  • Kashmiri Chilli Powder (optional)
  • 1 kg beef trotters (you can also use mutton trotters)
  • 1/2 kg shank meat
  • 1 cup oil
  • Ginger garlic paste
  • Ma spices special Nihari Masala
  • Onion paste
  • 2 cups water
  • 2 tbsp all-purpose flour
  • 1/2 cup water
  • 1/4 cup oil
  • 1 medium-sized onion (chopped)
  • Coriander leaves
  • Green chillies
  • Julian cut ginger

Step-by-Step Instructions

Step 1: Mixing the Nihari Masala

To begin, make a fine powder using a grinder. Once the fine powder is ready, add the powdered spices, including the optional Kashmiri Chilli Powder. Mix all the spices well including Ma spices Nihari Masala . This masala is sufficient for 1.5 kg of meat.

Step 2: Cooking the Trotters

Start by cooking the beef trotters. Close the lid and cook the trotters until they become tender. Keep in mind that beef trotters take time to cook properly.

Step 3: Cooking the Shank Meat

In a pressure cooker, add 1 cup of oil and heat it. Once the oil is heated, add the shank meat and ginger garlic paste. Then, add the Nihari powder that you prepared earlier. Fry all the ingredients for 5-6 minutes to remove the rawness of the meat and ginger garlic paste.

Step 4: Adding Onion Paste and Water

After frying, add the onion paste to the mixture. It is recommended to use onion paste as it enhances the flavor and increases the quantity of the curry. However, if you prefer not to add onion paste, you can skip this step. The aroma of the Nihari masala will fill your home at this point. Add 2 cups of water and close the lid. Cook the mixture on high flame for 1 pressure cook cycle, and then simmer for another 30 minutes on low flame.

Step 5: Preparing the Trotters and Shank Meat

While the shank meat is cooking, check the trotters in another pressure cooker. Remove the big bones from the trotters and make sure to eject the lacquer from them. Transfer the trotters and shank meat to a big vessel, and turn on the flame. Cook the mixture and add the lacquer you ejected from the big bones. You can also add the big bones, but it may look awkward, so it is better to remove them. Cook the mixture on high flame and remove any surface oil in a separate bowl. This oil will be used later.

Step 6: Thickening the Nihari

After a few minutes, you will observe the mixture boiling. In a separate bowl, mix 2 tbsp of all-purpose flour with 1/2 cup of water. Pour this mixture into the Nihari while stirring it with your other hand. This will increase the thickness of the Nihari. Cook the mixture for another 20-25 minutes on low flame. To avoid burning the all-purpose flour, you can put a heavy-bottomed pan below the vessel.

Step 7: Tadka for Nihari

Once the Nihari is cooked perfectly, it's time to prepare the tadka. Take a tadka pan and add 1/4 cup of oil. Heat the oil and add a chopped onion of medium size. Fry the onion until it turns golden brown. Then, add the coriander leaves, green chillies, and julian cut ginger. These three ingredients are a must for a perfectly flavored Nihari.

Step 8: Garnish and Serve

Your Nihari is now ready! Pour some of the surface oil that you had taken out before over the Nihari. Garnish it with a few coriander leaves, julian cut ginger, and green chillies. Serve it with naan, kulcha, or butter naan. We guarantee that once you try this homemade Nihari, you will forget about the Nihari you used to buy from outside.
